Under the guidance of Evelin & Carlo, chefs and hosts of Locanda 53, you’ll discover the secrets of one of the most loved symbols of Italian tradition — handmade tortellini.

Step by step, you’ll learn how to prepare fresh pasta: kneading the dough, rolling it to the perfect thinness, and shaping the tortellini just as tradition demands.
You’ll also be guided through the process of making fresh ricotta, exploring the fascinating art of curdling and balance — creating a delicate lemon-scented filling that blends softness and flavor in perfect harmony.

At the end of the class, you’ll sit together to taste the tortellini you’ve prepared, paired with a fine glass of wine selected to enhance its aromas.
